This will make a carrot lover out of anyone! This carrot recipe is phenomenal for enhancing the flavor of fresh carrots! And, if you use bagged baby-cut peeled carrots, it’s so simple to cook evenly in the microwave in under 10 minutes. If it’s summertime, I’ll omit the cinnamon and cumin for a fresh natural taste. Otherwise, I use the earthy seasoning to boost the flavor.

Ingredients:
- 12 oz. bag Baby cut peeled carrots
- 1 t Honey
- 1 T Sherry Vinegar
- 1 T Olive oil
- 1 T Melted unsalted butter
- ¼ t Granulated sugar
- ¼ t each, Salt & Pepper, to taste
- pinch of ground cinnamon
- pinch of ground cumin
Directions:
- Whisk together all ingredients except for the carrots in a medium bowl.
- Add carrots to the bowl, stir to cover carrots.
- Tightly cover bowl with plastic wrap and place in the microwave.
- Cook on high for 4 minutes, carefully remove cover and stir.
- Recover and cook for an additional 2-4 minutes, or until tender.
- Keep warm until ready to serve.
