Lemon Spice Roasted Cauliflower Florets - Great Side Dish!

This will make a cauliflower fan of you, if you're not already!

Ingredients:
- 1 Head of Cauliflower, stem removed and cut into florets (about 1 ½ lbs.)
- 2 T Olive oil
- 2 t Lemon zest
- 1 T Lemon juice
- ½ t Garlic powder
- ½ t Black pepper
- 1 t Zatarain’s Creole Seasoning
- ½ C Parmesan Cheese, finely grated
Directions:
- Pre-heat oven to 450 degrees.
- Line a baking sheet with sides with parchment paper.
- Set aside.
- In a large bowl, place cauliflower florets.
- Drizzle with olive oil, then add and toss together the rest of the ingredients, except for parmesan cheese.
- Place cauliflower florets evenly on prepared baking sheet and cover loosely with aluminum foil.
- Bake for 15 minutes.
- Remove from oven.
- Uncover, sprinkle with parmesan cheese, and bake for another 15-20 minutes, or until lightly browned.
