Lemon Almond Protein Balls

Ingredients:
- ½ C Vanilla Flavored Protein Powder
- 1 C Quick Oats
- ¼ C Almond butter
- 4 T Melted Coconut Oil*
- 2 T Agave nectar (*if you like them sweeter, add 1 more Tablespoon of agave and 1 T less of oil)
- 1 T Lemon zest (about 2 medium)
- 1 T Freshly squeezed lemon juice (1/2 of a lemon)
Directions:
- In a medium bowl combine oats and protein powder.
- Mix to combine.
- In another medium bowl, add almond butter, coconut oil, agave nectar, and lemon juice and zest.
- Mix to combine.
- Add the wet ingredients to the dry ingredients and mix well.
- The mixture should be dry but able to carefully form balls of dough with your hands or a scoop.
- Line a plate with parchment paper and carefully roll balls of dough, placing 9 or 10 on the plate.
- Refrigerate for five minutes, then, shape into balls, if needed.
- Serve immediately or refrigerate in an airtight container as needed.
