Winter Greens, Dried Fruit Salad with Honey Mustard Dressing

This is an easy salad to make when there’s not much fresh fruit during the winter. You can always add sectioned oranges, peeled and sliced kiwi, or any fruit in season or available to you, if you’d like. But, I keep these salad and dressing ingredients in my pantry in the winter, so I know by picking up some romaine or butter lettuce, I can quickly put this salad together. Everyone is satisfied until the Spring fruits start coming in.

Here's a great winter salad to make! Just keep most of it ready in your pantry for a quick salad, anytime.

Serves:: 1 cup
Ingredients:
  • Salad Dressing Ingredients:
  • ¼ C Apple cider vinegar
  • ¼ C Extra virgin olive oil
  • ¼ C Honey, or maple syrup, if desired
  • 2 T Orange juice
  • 1 t Orange zest
  • 1 ½ T Dijon Mustard
  • ¼ t Kosher sea salt
  • ¼ t Freshly ground black pepper
  • ⅛ t Ground Allspice
  • Salad Ingredients:
  • ½ C Dried Apricots, chopped small, or into strips (about 16 apricots)
  • ½ C Dried Blueberries
  • ½ C Blue cheese, crumbled
  • ½ C Golden Raisins
  • ½ C Sliced Almonds, toasted ( or, nuts of your choice)
  • 8 C Romaine lettuce, coarsely chopped (or any fresh greens of your choice.)
Directions:
  1. To prepare salad dressing:
  2. In a small bowl, whisk ingredients until well combined.
  3. Can be refrigerated until needed, for up to one week.
  4. To prepare salad:
  5. Place lettuce in a large bowl, add ¾ of the rest of the salad ingredients.
  6. Drizzle salad dressing over ingredients.
  7. Gently toss.
  8. Add rest of salad ingredients to garnish.
  9. Serve immediately.
