Healthy cookies? I think so! These have hardly any butter, and utilize whole grain oats and flour. In addition, it’s loaded with fruit from applesauce and big juicy raisins! It’s still dessert, but as wholesome as I can make them! Feel good about eating these!
These will look dark from the whole wheat flour, so you’ll have to watch carefully to see when they’re done. I like to push on the top gently to see if there is any “give”. If it is almost firm and slightly browned, it’s time to take them out of the oven. Give them five minutes to cool on the baking sheet before you remove them to a cooling rack, so they’ll hold together. I think they’re even more delicious the next day because the fruit will give them almost a “figgy” texture that tastes rich and delicious!
- 1 C Whole wheat flour
- 1 t Ground cinnamon
- 1 t Baking powder
- 1⁄2 t Baking soda
- 1⁄2 t Sea salt
- 1 C Brown sugar
- 1⁄4 C Applesauce
- 2 Large eggs
- 2 T Unsalted butter
- 1 1⁄2 t Vanilla extract
- 1 1⁄3 C Oats
- 1 C Chopped walnuts
- 1⁄2 C Jumbo Raisins, or 1 cup regular raisins
- Heat oven to 350 degrees.
- Combine the flour, cinnamon, baking powder, baking soda, and salt in one bowl.
- Mix the brown sugar, applesauce, eggs, unsalted butter, and vanilla extract, in another bowl.
- Mix the two bowls into one bowl.
- Add in the oats, walnuts, and raisins, stirring just until mixed.
- Drop rounded tablespoons of the dough onto a parchment lined baking sheet.
- Cook for 10-12 minutes, at 350 degrees, or until lightly golden brown.
