A new product makes this more exciting! You can add any dried fruit or raisins to this granola, but, I recommend using a new product line from Sun-maid raisins. I discovered them when I visited the Sun-maid Company Store in Selma, in Central California. They are called sour strawberry golden raisins and sour lemon golden raisins.
To me, they taste both a little sweet and a little sour…they’re delicious! It wakes up a simple granola to make it taste exciting and more delicious. They are made from golden raisins and drenched in fruit juices to make the flavor-packed offerings. I’ve been using them on salads, oatmeal, yogurt, or anywhere I can include them! Give these a try. - Dry ingredients:
- 4 C Old fashioned rolled oats
- 2 T Rainbow Quinoa (or tri-colored)
- 1 C Slivered almond, chopped pecans, chopped walnuts, or any unsalted nuts you like
- ½ C Unsweetened shredded coconut
- 1 t Ground cinnamon
- ½ t Ground nutmeg
- ½ t Ground allspice
- ½ t Kosher sea salt
- Wet ingredients:
- ½ C Virgin coconut oil
- ½ C Pure Maple syrup
- Add-ins:
- 1 C Sunmaid sour strawberry golden raisins and sour lemon golden raisins or, raisins of any kind
- Pre-heat oven to 350F degrees. Arrange two racks in the upper and lower one third of the oven.
- In a large bowl combine the dry ingredients; oats, quinoa, chia, nuts, salt, cinnamon, allspice, and nutmeg.
- In a medium bowl, combine the coconut oil and the maple syrup.
- Pour the wet ingredients over the dry ingredients, and mix well.
- Spread the granola over two parchment covered baking sheets.
- Bake for 10 minutes, then toss.
- Return to oven and bake on the opposite shelves for another 10 minutes, or until golden browned.
- Remove from oven and top with raisins while mixture is still warm.
- When cool enough to handle, gently break up the granola.
- When completely cooled, Store in an airtight container.
