Ingredients:
- 2 Large Garnet sweet potatoes, peeled or unpeeled
- 6 T Almond butter
- 1 T Agave nectar
- ¼ t Ground cinnamon
- ¼ t Ground ginger
- 4 medium kiwi, peeled, sliced
Directions:
- Move the oven rack to the top slot and preheat the oven to 375 degrees.
- Peel the sweet potatoes and slice into ¼" thick cross-wise rounds.
- Place the sweet potatoes on a small baking sheet lined with parchment paper, touching but not overlapping.
- In a small bowl mix together the almond butter, agave nectar, cinnamon, and ginger.
- Set aside.
- Place the baking sheet on the top rack of your preheated oven, roast for 10 minutes, flip, and roast for an additional 10 minutes.
- Turn the oven temperature up to 450 degrees, then continue to roast an additional 2-3 minutes on each side.
- Meanwhile, peel and slice the kiwi to ⅛-1/4” thick and set aside.
- When rounds are cool enough to handle, arrange them on a platter, place about a ½ teaspoon of the nut butter mixture on top, and top with the kiwi slices.
- Serve warm.
