So good! This is such a delicious and easy recipe that it’s a go-to recipe for entertaining large groups of people. I just whip out more 3 more baking sheets, double or triple the recipe, and make sure it cooks evenly by rearranging baking sheets while cooking, every 4 minutes or so.
Roasted Asparagus with Basil and Pistachios

Ingredients:
- 2 lbs. Asparagus, hard ends trimmed
- ¼ C Roasted, salted pistachios, coarsely chopped
- 2 tsp. olive oil
- ¼ tsp. salt
- 12 basil leaves
- ¼ C Grated Parmesan Cheese, optional
Directions:
- Preheat oven to 425°F.
- Arrange asparagus in a single layer on a large baking sheet.
- Shell and roughly chop the pistachios.
- Sprinkle them over the asparagus.
- Drizzle with the olive oil and sprinkle with salt.
- If desired as an option, sprinkle with parmesan cheese.
- Roast until bright green and tender, 12-15 minutes depending on thickness of the asparagus.
- Transfer asparagus and pistachios to a serving plate and gently tear the basil leaves over top.
