This is such a family favorite! It’s also a fantastic side dish for a potluck or picnic, and works beautifully with chicken, pork or fish. This is the most versatile salad, and, you can make it year round!
Orzo, Raisin, Feta & Grape Salad- Love this salad!

Serves:: 6 cups
Ingredients:
- 1 C Orzo (can use whole wheat)
- 2 T Extra Virgin Olive Oil
- 2 T Freshly squeezed Lemon Juice
- 2 t Lemon Zest
- ¼ Teaspoon Kosher sea salt
- ¼ Teaspoon Freshly Ground Pepper
- 2 C Red Grapes, cut in half
- ⅓ Cup Crumbled Feta Cheese
- ¼ Cup Chopped Fresh Mint (optional)
- 2 T Shallots, finely chopped
- ¼ C Golden Raisins
- 3 Green Onions, both white and green parts sliced diagonally
Directions:
- Bring a large pot of water to a boil.
- Add orzo and cook according to package instructions or, until tender, about 8 minutes.
- Drain orzo in a small opening colander and rinse with cold water until cool, then set aside.
- Meanwhile, whisk together oil, lemon juice, lemon zest, salt and pepper in a large bowl.
- Add grapes, feta, green onions, mint, shallots, and drained Orzo to the bowl and gently combine.
- Test for seasoning, making any needed adjustments.
- Serve immediately, or covered and chilled in refrigerator.
- Will keep for up to a week, if refrigerated.
