No-Bake Orange Date Walnut Protein Bars - Easy Dessert in 10 minutes!

Ingredients:
- 3 T Unsweetened shredded coconut, divided
- 2 ½ C Very soft Medjool dates, pitted
- ¼ C Vanilla Protein Powder (sweetened)
- ¼ C Orange juice, freshly squeezed
- 1 T Orange zest
- ¼ C Walnuts, toasted and finely chopped
Directions:
- Pre-heat oven to 400 degrees.
- Bake walnuts on a baking sheet placed on the highest shelf, for 3-4 minutes or until lightly toasted, being very careful not to burn them.
- Evenly sprinkle 2 tablespoons coconut over the bottom of an 8-inch square baking dish.
- Into a food processor, add dates, protein powder, orange juice and zest.
- Process until coarsely chopped for about 30 seconds.
- Test the date mixture to see if it compresses easily in your hand. If too dry, add slightly more juice.
- If too wet, add more protein powder.
- Firmly press date mixture over coconut, covering bottom of dish.
- Sprinkle with remaining tablespoon coconut and the toasted walnuts, gently pressing into dates with parchment paper.
- Cut into 2-inch squares, or as desired.
