Ingredients:
- 6 oz. Philadelphia brand Cream Cheese, cubed
- ¼ C Unsalted butter
- 2 t Garlic, minced
- ⅔ C Milk
- 4 C Corn kernels, frozen, canned, raw, or roasted
- ½ t Dried Thyme
- ¼ t Kosher sea salt
- ¼ t Freshly ground black pepper
- 1 C Shredded Mozzarella cheese
- 1 T Chopped fresh parsley leaves
Directions:
- Preheat oven to 375 degrees F.
- Lightly coat a 9-inch baking or casserole dish with nonstick spray.
- Set aside.
- Combine cream cheese, butter and garlic in a medium saucepan over medium high heat.
- Stir in milk until smooth, about 2 minutes.
- Stir in corn until well combined, about 2 minutes.
- Stir in thyme, salt, and pepper.
- Spread the corn mixture into the prepared baking dish; sprinkle with cheese.
- Place into oven and bake until bubbly, about 17 minutes until cheese is lightly golden browned.
- Serve immediately, garnished with parsley, if desired.
