Cinnamon Lemon Coconut Balls

Ingredients:
- 2 C Fine almond flour
- ¼ C + 1 T Agave nectar
- 2 T Almond oil
- 2 t Lemon zest, (1 lemon)
- 1 ¼ t Ground cinnamon, or to taste
- ¼ t Kosher sea salt
- ¼ C Shredded unsweetened coconut
Directions:
- Combine almond flour, agave nectar, almond oil, lemon zest, cinnamon, and salt in a food processor bowl.
- Process until mixture is well combined and clumps together slightly.
- Line a large plate or small baking sheet with plastic wrap and divide dough into 20 pieces.
- Roll each piece into a ball about 1” in diameter.
- Place shredded coconut in a small bowl and roll each ball in the coconut.
- Serve immediately or store covered in refrigerator until ready to eat.
- These freeze well if tightly covered.
