I’m so obsessed! This California version, is so good! You may know Masala chai, also known as ‘chai’, or ‘chai tea’ – is a traditional tea from India containing a mixture of warming aromatic herbs and spices mixed with black tea and milk. Chai means tea. I’ve taken out the tea and black pepper from this mix to use it as a spice mix for oatmeal with milk, to add to green, herbal or black tea, or to use as you would cinnamon in baking or cooking. I don’t want the caffeine, tea, and the black pepper is too strong and savory to me. So this mix is just right! You can buy the spices whole and grind them in a coffee or spice grinder, and find them for less if you go to an Indian specialty store instead of from the baking isle of your grocery store. They’ll probably be fresher, too.

- 1 t Ground ginger
- 1 t Ground cardamom
- ½ t Ground cinnamon
- ¼ t Ground cloves
- ¼ t Ground allspice
- ¼ t Ground anise
- Place all spices into a small bowl and stir to combine.
- Place in an airtight container and store in a cool dry place.
- Note: Use ¼ t to add to 2 cups of tea, ½ t per cup of cooked oatmeal, to sprinkle lightly on roasted vegetables before cooking, or use this in place of or, in addition to cinnamon in recipes.
